Ingredients

  • pounds Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter melted
  • 2 tablespoons honey
  • 1 tablespoon balsamic glaze
  • 1 tablespoon maple syrup
  • 1 teaspoon red pepper flakes adjust to taste
  • ½ teaspoon smoked paprika
  • 1 teaspoon fresh lemon zest

Equipment

  • Large baking sheet or sheet pan
  • Large & Small mixing bowl for the glaze
  • Chef's knife & Cutting board
  • Measuring cups and spoons
  • Whisk or spoon for mixing the sauce
  • Silicone spatula or tongs for tossing
  • Microplane or zester for fresh lemon zest
  • Paper towels for drying the Brussels sprouts

Method

Step 1: Prepare the Brussels Sprouts
  1. Preheat your oven to 425°F (220°C). Wash, trim, and cut the Brussels sprouts in half. Pat them completely dry with paper towels to ensure maximum crispiness.
Step 2: Season
  1. Place the Brussels sprouts in a large mixing bowl. Add olive oil, salt, and black pepper. Toss until evenly coated.
Step 3: Roast
  1. Arrange the Brussels sprouts cut-side down on a large baking sheet in a single layer. Roast for 20–25 minutes, or until the edges become golden brown and crispy.
Step 4: Make the Steakhouse Glaze
  1. While the Brussels sprouts are roasting, whisk together the melted butter, honey, balsamic glaze, maple syrup, red pepper flakes, and smoked paprika in a small bowl.
Step 5: Toss and Finish
  1. Transfer the hot Brussels sprouts to a serving bowl. Pour the glaze over them and toss gently until coated.
Step 6: Garnish and Serve
  1. Sprinkle fresh lemon zest over the top and serve immediately while hot and crispy.

Notes

Excess moisture creates steam during cooking, preventing the sprouts from becoming crispy. Always dry them thoroughly after washing.
