- Preheat the oven to 375°F (190°C). Line your baking sheet with parchment paper or lightly grease it.
- In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. For extra cinnamon flavor, you can add 1/2 tsp of cinnamon here.
- Open the can of cinnamon rolls and separate the dough.
- Flatten each roll slightly using your hands or a rolling pin to create a small square or circle.
- Add about a teaspoon of the cream cheese mixture to the center of each.
- Fold the dough around the filling and pinch the edges tightly to seal and form small pockets.
- Brush the tops with melted butter and sprinkle with a cinnamon-sugar mix for extra flavor and crunch.
- Place the filled dough bites on your baking sheet and bake for 10–12 minutes, or until golden brown.
- Let them cool on a rack for a few minutes. Warm the included icing (from the cinnamon roll can) and either drizzle it over the top or serve it on the side for dipping.
