Ingredients
  

  • 6–8 bird’s eye chilies adjust to taste
  • 2 tbsp sambal oelek or any chili paste
  • 4 cloves fresh garlic
  • ¼ cup fresh lime juice
  • 2 tbsp white vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey or sugar for balance
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • Optional: 2 tbsp fresh cilantro for a herby twist

Method
 

Prep the ingredients
  1. Wash the chilies and peel the garlic. If you want less heat, remove some chili seeds.
Blend everything
  1. Add chilies, sambal, garlic, lime juice, vinegar, olive oil, honey, salt, and pepper into a blender.
Blend until smooth
  1. Process until you get a smooth, slightly thick sauce. Add a splash of water if needed for consistency.
Taste & adjust
  1. Adjust salt, sweetness, or lime juice based on your preference.
Optional step
  1. Stir in chopped cilantro for a fresh, tropical flavor boost.
Store & serve
  1. Transfer to a jar and refrigerate for at least 30 minutes before serving to let flavors develop.

Notes

Lime juice and honey are essential. Without them, the sauce can taste too harsh or one-dimensional.
