  • 2 cups roasted peanuts or pecans/almonds
  • 1 cup maple syrup
  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking soda

Method
 

Prepare the Tray
  1. Line a baking tray or large plate with parchment paper or a silicone mat. Lightly grease it with butter or cooking spray.
Heat the Syrup Mixture
  1. In a heavy saucepan, combine maple syrup, sugar, corn syrup, butter, and salt. Cook over medium heat while stirring gently until the sugar dissolves.
Cook to Candy Temperature
  1. Attach a candy thermometer and continue cooking without stirring until the mixture reaches 300°F (hard crack stage).
Add Flavor and Nuts
  1. Remove the pan from heat. Quickly stir in vanilla extract and baking soda. The mixture will foam slightly. Fold in the roasted nuts immediately.
Shape the Candies
  1. Drop spoonfuls of the candy mixture onto the prepared tray. Work quickly because the candy hardens fast.
Cool and Serve
  1. Allow the candies to cool completely for about 30 minutes. Once hardened, enjoy immediately or store in an airtight container.
